Here's a nifty little interview with Alex Amsel (managing director) and Sarah Webb (stop-motion artist) from the Cletus Clay development team, where they talk about the challenges of creating a stop-motion action game, their favorite clay models, and coordinating development with their lead designer Anthony Flack who resides in a completely different time zone.

Some actual clay models used in production can be seen in the video, and they've even demonstrated a bit of Cow Patrol (a Cletus Clay mini-game) on the iPad near the end of the clip. Cletus Clay is scheduled for a release on the PC and consoles sometime early next year.
